Three chestnut recipes that explore the tradition of New Year Resolutions.
Goodbye last year, hello this year. In one short night our focus shifts, our dreams get bigger! One short day follows to start and clear a path to an exciting 365 day journey.
Some things most probably will remain the same for example eating too much, aiming to drink less (alcohol that is), dodging covid (although this is getting increasingly more difficult). But a new year brings a sense of change, reachable horizons. It’s that old chestnut of feeling hopeful, seeing the good, wishing to improve?
Now this little blog is not really about resolutions as such. It is about three Chestnut recipes using up a pouch of cooked chestnuts that I bought on a whim of ‘I love Chestnuts’. Yet actually the dishes I made showcase my resolutions for 2022.
Chestnut and Mushroom Soup - Resolution 1
This is a favourite at this time of year, a tried and tested combination. Warming, tasty, you know what you are going to get! So to my first 2022 resolution - earthy, balanced, hearty, dependable. 'Do what you do best'! 'Keep going with what you enjoy'! 'Why change anything'?

Chestnut Scones - Resolution 2
As you know I love a scone, but what I really love is creating scone recipes from traditional combinations. Sage and Onion Scones, Salmon and Beetroot Scones, Almond and Raspberry Scones. Combinations that work but applied in a new way. I've never tried chestnuts within a scone mix so here we go, a fabulous recipe for you. Therefore my second 2022 resolution is to adapt and enjoy! Mix and match! Find comfort in the old with twist of something new.

Chestnut & Silton Hummus - Resolution 3
My third 2022 resolution will be to push the boundaries. Do something new. Seek and search to expand the mind, spirit and soul. I didn’t follow a recipe for this hummus, I went on instinct. Try and taste. All you need are a few cooked chestnuts, a wedge of blue cheese ( I used stilton), lots of cracked pepper, couple of teaspoons of tahini, splash of water (or wine!), zest and lemon juice. Blitz, rest to infuse, slather on toast or indeed upon a Chestnut Scone!
And there you have it, my ‘Chestnut Resolutions’! I will continue doing what I love to do. I will adapt and accept new ideas. I will actively seek the unknown to learn.
